gingham and sunshine

With about 12 parks and 5 beaches within three miles of my apartment, not only are there plenty of picnic-friendly locations, there was a creative picnic decorating contest at Jazz in the Park tonight. I know you don’t really know me, but that has Amy written all over it. Since I missed the memo, I decided to plan my own perfect picnic: corn & black bean salad…check, swingy skirt & airy sandals…check, gingham blanket…check. Now to find a picnic companion…orrr maybe just a good book; I don’t want anyone wrecking my perfect picnic.

Ingredients: 1 can (14 oz) black beans, 2 c. frozen corn, 1 small red bell pepper, 1/2 red onion-chopped, 1 1/2 tsp. ground cumin, 2 tsp. hot sauce, 1 lime-juiced, 2 tbsp. vegetable  or olive oil, salt and pepper.

Prepare: Combine all ingredients in a bowl. Let stand at least 15 minutes for corn to fully defrost and flavors to combine, then toss and serve. The corn will also place a quick-chill on this easy side-salad as it defrosts — no need to refrigerate!
